Some of the best recipes - be it for a prepared dish or in this case, comes out of necessity. For prepared dishes, the best examples of creating iconic dishes are the Ceasar's Salad and Buffalo Wings.

While visiting the Philippines, a group of us created a cocktail out of local ingredients. In this case, it was San Miguel brand gin, soda water, a touch of sugar, and freshly squeezed calamansi juice. 

While San Miguel gin and fresh calamansi, which is a small citrus fruit with a touch of sourness are not readily available, even at area Filipino grocers, we nonetheless recreated with this cocktail, which we call the Novaliches, with local ingredients.

So without further delay, here is the Novaliches, which is an ideal gin-based drink for hot summer days.

  • 1 jigger gin
  • 1 tbsp pure Sun Tropics pure calamansi juice*
  • 1/2 tsp. bar syrup
  • unflavored soda water
Stir the three ingredients until well blended. 
Pour the mixture into a low ball glass filled with ice
Fill the glass with unflavored soda water and stir
Top with the fresh juice of one calamansi fruit if available
