Simple, delicious grilled leg of lamb


If you are looking for a nice cut of meat and want a change from tri-tip, try this perfect simple yet leg of lamb recipe.

Ingredients
  • 1 boneless short cut lamb leg, butterflied
  • 1 bunch Italian parsley, chopped
  • 1 bunch rosemary, chopped
  • 6 cloves garlic, minced
  • 2 teaspoons kosher salt
  • 2 teaspoons cracked black pepper
  • 2 ounces olive oil
Preparation

Preheat grill to 350°F.

Combine parsley, rosemary, garlic, salt, pepper and oil in a small workbowl and mix thoroughly. Rub herb mixture over lamb leg until evenly coated, then place onto grill.

Grill lamb leg over medium indirect heat covered for approximately 1 hour, or until a probe thermometer placed into the thickest section reads 135°F.

Let meat rest loosely covered with aluminum foil for 12-15 minutes before carving and serving.

Serve with grilled seasonal vegetables.
