Blueberry Rum Mojito Snow Cone



Nothing says summer like a snow cone! Serve up this adult version of a classic at your next backyard shindig.

Ingredients
  • Blueberry Syrup
  • ½ cup blueberries (fresh or frozen)
  • 7-8 fresh mint leaves
  • ¼ cup water
  • ¼ cup sugar
Snow Cone
  • Shaved ice
  • 3 ounces white rum (2 shots)
  • Juice from 1 lime
Preparation

Place blueberry syrup ingredients on the stove over medium heat, stirring continously to mash the blueberries and bruise the mint leaves until syrup thickens and begins to bubble. Remove from heat and let cool 10 minutes.

Strain syrup to remove blueberry skins and mint leaves, combine syrup with lime juice and white rum and place in the freezer to chill quickly.

Shave ice and place in two serving cones. Pour chilled mixture over ice, garnish with a sprig of mint!

Aside from the bold claim that Elk Grove is his city, Mr. Davis made a more opaque reference that in some corners is considered a coded message to some of the less well-enlightened community members.

Mr. Davis says, "Elk Grove city has big city ideas with small-town values."

Terms like small town values as used by many politicians is another form of code-switching or dog-whistle politics that excludes the very people who live in Elk Grove. Intentional or not, this is a poor use of words in a city as diverse as Elk Grove.
