Nothing beats cookies around the Holidays. Everyone has their favorite and we have several favorites.
While most people tend to go for classic chocolate chip or oatmeal raisin, both of which our crew will undoubtedly demolish, another classic is the venerable sugar cookie.
One of the reasons they are overlooked is because a really good sugar cookie requires rolling. Thanks to the wonder of the internet, we tracked down this spectacular no-roll recipe a few years ago on the Andrea the Kitchen Witch Blog and have been using it ever since.
It is really easy to make for a sugar cookie and it tastes great!

Sugar Cookies makes 3 dozen cookies
1 1/4 c white sugar
2 sticks butter (1 cup)
3 egg yolks
3 t vanilla
2 1/2 c AP flour
1/2 t cream of tartar
1 t baking soda
1/4 t table salt
about 1/2 c sprinkles, colored sugars or granulated sugar to roll in
Cream the butter and sugar together in a stand mixer with the paddle until very light and fluffy, about 5 minutes on medium speed.
Scrape down the sides and add the vanilla extract. Mix until incorporated. Add the egg yolks one at a time, beating well between each addition and scraping sides of bowl and paddle after each addition.
Mix the flour, baking soda, cream of tartar and salt together in a bowl. Slowly add the dry ingredients, scraping down the sides after each addition. Scoop balls of dough and roll in colored sugar or sprinkles, coating all sides.
Line cookie sheet with wax paper or parchment paper and baked at 350 for 11-12 minutes.
