Double Rainbow Soup with Chicken

This fresh soup provides a rainbow of key nutrients vital for
healthy skin, immune function, circulation and vision in fewer than 180
calories per serving.
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 pound chicken breasts, cubed
- 1 red onion, sliced
- 3 garlic cloves, minced
- 1 bunch rainbow carrots, chopped
- 1 bunch rainbow chard, chopped
- 1 bunch dino kale, chopped
- 1 zucchini, chopped
- 1 bunch cilantro, chopped
- 1 quart chicken broth
- 1 green onion, sliced for garnish
Preparation
In a large soup pot, heat olive oil over high heat. When
oil begins to smoke, add chicken and sear 5-6 minutes on each side to
brown. Add onion, garlic, carrots and chard and cook for an additional
3-4 minutes. Add remaining ingredients and simmer for 20 minutes or
until vegetables are tender. Garnish with sliced green onion.
