Remember when I told you about my mother-in-law’s mysterious ability to bake the most amazing treats without measuring anything? I previously mentioned that my husband, Marcos, and I are known to show up on her doorstep late at night asking for her to bake her specialty cookies. Today was one of those days!

I asked Josie if she could come over to my house to make them this time. Tonight my home is a lovely blend of intense warmth and the fragrances of baking cinnamon and vanilla. On the stovetop I have started a pot of beans with long stems of rosemary boiling on the top. Somehow the rosemary is as intense as the other smells. I wish I could seal up my house to keep the warmth and smells in forever.

These cookie bites are made with a blend of healthy flours and grains. The blend brings a richness to the flavor and the smattering of sweet nibs keeps this in the cookie category. Feel free to add any fixings you like.
